3 tbsp. minced cilantro
2 tsp. coursely ground pepper
8 cloves garlic, minced
1 lb. skinless, boneless chicken breasts, cut into 1-1/2 inch chunks
1/3 c. organic, low sodium tomato sauce
1 tsp. firmly packed brown sugar
1 tbsp. organic apple cidar vinegar
1/2 c. organic raisins
In a small bowl, mix cilantro, pepper, and three-fourths of the garlic; rub over chicken. Place chicken pieces well apart on a foil lined baking sheet. Bake at 500 degrees F, until chicken is lightly browned and no longer pink in the center; cut to test (approx. 18-20 minutes). Meanwhile, in a food processor or blender, whirl remaining garlic, tomato sauce, sugar, vinegar, and raisins until are chopped. Serve chicken hot from the oven with raisin dipping sauce.
